Lean vs fatty, and why sharing works

I tried the fillet and loin tonkatsu at Tonkatsu Tonta とんかつ とん太 in Takadanobaba (Toshima-ku), Tokyo, and while both had their strengths, the balance between them made the meal work. The fillet was juicy, soft, and lean, while the loin was noticeably fatty and heavy, making it hard to finish on its own. Sharing half of each turned out to be the best choice, as the contrast kept things enjoyable without becoming overwhelming.

The real standout was the shrimp katsu. It was easily the best I’ve had, with the shrimp plump, juicy, and perfectly cooked. It had that ideal texture where it still feels substantial but not rubbery, and it left a stronger impression than the pork itself. The portion size could have been slightly bigger, but it was still satisfying.

Quiet efficiency, without the tension

Sitting at the counter gave a clear view of the kitchen, and the operation felt calm, organized, and efficient. The chef handled the frying while the staff managed everything else smoothly without any conversation. Despite the quiet atmosphere, the service felt polite and welcoming, not strict or intimidating.

The dining room itself was very quiet, so it wasn’t the kind of place where you can talk freely, but it still felt comfortable. I also appreciated that they greeted us warmly when leaving. The effort put into a full English menu was another thoughtful touch, especially for foreign customers.

This is a solid tonkatsu spot, especially if you order strategically and avoid going all-in on the fatty cuts.
