I’m going to show you how to make delicious salad dressing using yogurt and shio koji. It’s rich and creamy like Caesar salad dressing but healthier. Yogurt and shio koji are both fermented foods and good for your gut.

Ingredients

  • 2 tbsp (2 tbsp) yogurt
  • 1 tbsp (1 tbsp) shio koji
  • 1 tbsp (1 tbsp) olive oil
  • 2 tsp (2 tsp) lemon juice
  • 1 tsp (1 tsp) sugar (I like using zero-calorie sugar made from monk fruit.)
  • 0.5 tsp (0.5 tsp) grated or crushed garlic

directions
 

  • In a bowl, add yogurt, shio koji, olive oil, lemon juice, sugar, and grated or crushed garlic.
  • Give it a stir, and we're done with the dressing!
  • To go with this dressing, I like to sprinkle some seeds, Parmigiano Reggiano, and pink peppercorns over the salad. Enjoy!
