This quick, keto-friendly snack features salty dried tomatoes paired with quality olive oil—perfect as an addictive appetizer alongside cheese, wine, or beer.
Cover with plastic wrap. We'll cook this in the microwave until the dried tomatoes become soft: Do three rounds of 3mins at 600W. Between the rounds, give it a mix and if the water has evaporated, add more water.
Once the tomatoes are soft, add pine nuts and high-quality olive oil.Dried tomatoes are quite salty, so no more seasoning should be necessary.
